A dish born of water and silence. Inspired by slow gestures and unhurried flavors, each element has been conceived as part of an infusion—of sea, of light, of something unsaid. There is warmth and freshness in a single breath, textures that melt away and others that surprise. The base is as deep as the bottom of the sea, where time and flavor meet. Citrus notes emerge like distant echoes of lemon trees in bloom, bringing contrast and balance. But there are also secrets — hidden layers, silent intentions, elements that only reveal themselves to those who know how to listen with their taste buds. A dream served on a plate. Not to be understood — but felt.

Al Cecchi

Black truffle gnocchi with corn and lime sauce, fried scarlet shrimp, and slow-cooked asparagus is the dish I created for a great Italian friend who loves seafood. The flavors of the Algarve and the aromas of Tuscany are the secrets of this dish. AL CECCHI, born out of my longing for him. It bears his name because it was born out of respect, longing, and gratitude. Thank you, Paolo! I love you, my friend!

Açorda “Poe”

I think this culinary specialty is one of the seven gastronomic wonders of Portugal. With ancient roots in the Alentejo region, açorda has been invented and reinvented over and over again. And the best one is, of course, the one we like best. My açorda is a traditional one with pennyroyal, hidden inside a cabbage leaf and sitting on top of a smooth shrimp cream. The rest are little surprises of flavors and aromas.
